Kurshot’s Amazing Mayo Recipe

I admit the image could be better, but like the “custom” label says… this stuff is AMAZING!!

Since I’m on the Keto Diet and need to get 70%+ of my calories from fat, I wanted to make something super tasty that allowed me to quickly consume a large quantity of fat calories.

What better than MAYO!!!

I love mayo so much, but in the past, I was always told how bad it is for your health and yadda yadda.

The good news is, now I know that’s bullshit. Especially on the Keto Diet.

Well, sort of.

The thing is, like most of America’s “food” industry, Hellman’s uses soybean oil, sugar, and other garbage in their recipe.

If I was gonna be consuming a ton of this stuff, I wanted it to contain food that was actually good for me, opposed to the toxic shit sold on store shelves across the country.

So here’s what I came up with…

Ingredients I use:

  • 1 Cup of UNrefined Coconut Oil
  • 1/4 Cup of Olive Oil
  • 2 Yolks from Large Pastured Eggs (not to be confused with “free range” eggs, which is marketing bullshit. The only eggs that come from hens who are allowed to go outside and eat worms and grubs like they’re supposed to (not grain feed) are “pastured” eggs. The box will say Pastured.
  • 1 Whole Large Pastured Egg (3 total eggs used)
  • 11/2 Tsp of Bragg’s Apple Cider Vinegar
  • 11/2 Tsp of Fresh Lemon Juice
  • 1 Tsp of Dijon Mustard
  • 2 Garlic Cloves
  • 1 Tsp of Salt (or more if you’d like)

How I make it:

  1. Put all the ingredients in a Food Processor EXCEPT the Olive and Coconut Oil. (You can also use a blender such as the Nutri-Bullet, but it’ll probably get a lot messier. And I haven’t tried whisking it, so you’re on your own there lol. The ingredients don’t blend easily, so it’ll take some time I’m sure.)
  2. Blend all of that for 30 seconds to a minute.
  3. Then SLOWLY pour a little bit of the oils in at a time (I have no idea why, but it was recommended in nearly every mayo recipe I looked up). This usually takes me about 2-3 minutes at least, so don’t rush it. And if you want the mayo to be thicker or thinner, then add more or less of the oils. So to be clear, the more oil you add, the thicker it gets. And vice versa.
  4. Bottle that shit and enjoy the best mayo in the world — Kurshot’s Amazing Mayo!

Ps… I found the side note below on Epicurious, a pretty legit food site. It just goes to show you the difference between “normal” eggs and pastured eggs…

Raw egg is not recommended for infants, the elderly, pregnant women, and people with weakened immune systems. To avoid the risk of salmonella infection, you can use pasteurized egg yolk instead.”

Dieting, Food (energy), Food Fuel,

Why I’m Loving My New Ketogenic Diet (Hint: It includes eating lots of Bacon)

I’m absolutely LOVING my new ketogenic diet and here’s why…

First things first, I DON’T recommend the keto diet to 99% of the population for the simple fact that it’s super challenging to adhere to considering I can’t eat any starchy carbs and it requires monitoring and recording my nutrition, at least initially.

However, and it’s a BIG however, what I can eat is just about everything else mouth watering in this world such as heaps of bacon, cheese, steak, lots and lots of fat and butter, and yes, even pizza (by modifying the ingredients for the dough).

Essentially all my calories will come from 75% fat, 20% protein, and less than 5% carbs coming mostly from non-starchy vegetables like asparagus, broccoli, and dark leafy greens (spinach, kale, etc).

Ya see, our bodies aren’t really designed for ingesting  large amounts of carbs and performs much better on a high fat/low carb diet.

So eating a fuck ton of natural fats is not only ok, it’s GREAT for you.

And that’s not all.
Here’s the money shot: once my body assimilates to using fat (instead of carbs) for its primary energy source…

I’ll be able to go all day without feeling hungry, if, let’s say, I’m focused on work and don’t want to bother with eating.

I’ll have a nearly unlimited source of energy and never get bogged down, since your body can store much more fat than carbs (should have done this for Bike To Believe).

I’ll think clearer and have more energy (already feeling it and it’s insane).

I’ll experience lower blood pressure, a drop in cholesterol, decrease in joint stiffness and pain, much better sleep, and the best part is…

I’ll actually lose weight!! Which I already am.

It’s insane.

Again, this is not an easy to diet to learn or adhere to and initially requires a tremendous amount of discipline and patience, so I don’t recommend it for everyone.

But for those who are strong enough mentally and are willing to stick it out long enough to start seeing and feeling the tremendous results, it’s SO worth it.

Here are the BEST RESOURCES I’ve found:

Ruled.Me – best site I’ve found that covers absolutely everything you need to master the ketogenic diet. – Download the app to your phone for the best way (imo) to count calories and make sure you’re covering all your nutritional bases. – This app is suppose to be better and is recommended by the guy I’m about to recommend you learn more from. I’m looking into it now as we speak. My only issue with this app is that I don’t think it has a very large data base of food and you can’t scan packages for tracking nutrional data like you can with the MyFitnessPal app, which makes life SO MUCH easier.

Dom D’Agostino – I love Tim Ferriss and that’s who recommended me to Dom and who introduced me to the diet. Tim has 3 podcasts with Dom where he explains how he approaches the keto diet and so much more, which I’ll link below.

Food Fuel, Mental,

How I Make My Favorite Salad For Maximum Energy

I absolutely love salads because they’re just about the best fuel you can consume… and they taste fucking delicious!

Again, when you’re eating high quality foods, this translates into a high quality mind and body. And since the quality of our thoughts determine the quality of our life, it all comes full circle and translates to a dope life.

Here’s how I make my favorite salad for maximum energy:

  • 6 ounce chicken breast (or fish, and chopped up)
  • A couple big handfulls of spinach or kale (chopped up)
  • A small handfull of cilantro (chopped up)
  • 1 Tomato (in the picture I added 6 cherry tomatoes plus half a regular tomato, all chopped up)
  • 1/4 cucumber (usually, but not always, and chopped up)
  • Half green pepper (chopped up)
  • 1/2 Lemon (squeezed)
  • Cap full of organic apple cider vinegar
  • A few douses of high quality olive oil (all olive oil is not created equal and often mixed with shitty oil like canola, which is highly processed)
  • Sea salt and pepper

  1. I put the spinach in a large salad bowl first, then chop up the cilantro and put that in, then chop up the rest of the ingredients and throw that in (all chopped up).
  2. Then I squeeze the lemon in the bowl, circling around the bowl so there’s even coverage on the food.
  3. Then pour in the cap full of apple cider vinegar, and squeeze the lemon in.
  4. Lastly, I sprinkle in some sea salt and pepper.
  5. Once all that’s in the bowl, I take two spoons and mix the salad up thoroughly.

Then I eat!!

The benefits of eating this delicious concoction are the fuel you get from it, the mental performance that is derived from eating whole foods, and the lightness of the food and no bogging down of your mind and body from having a full stomach, so you can still work or play hard and have max energy.

Bon apétite!
